Beet and Rice in One Delicious Dish? Try This Rice Recipe!
Have you tried beets in your food diet?

Beets, as we all call here in Canada and the USA (also known as beetroot in European countries and British English) are very nutritious. Beets are a great source of dietary fiber, Vitamin C, iron and potassium.

Are you at a point of trying not to consume foods that are high in cholesterol? ​
Don’t worry. With beets, you will be consuming less cholesterol and saturated fat.

​Indeed, beets can be a great addition to your list of healthful foods.

And what is more amazing about it is that - beets blend pretty well with many other root vegetables and green veggies.

Have we mentioned rice?

That is right. Rice.

Our gluten-free recipe featured in this post called: “Beet and Rice Flatbread” would use Sushi rice.
​

Sushi rice and beets blend perfectly and can create a very flavourful and delish, gluten-free flatbread.
Below are the ingredients you will need to prepare to create this delish dish.

​Ingredients:
Flatbread:
1 bunch beets with tops, about 3 large
4 cups (1 L)cooked U.S. sushi rice
2eggs
½ cup (125 mL)flax meal
2 tbsp (30 mL)olive oil
2 tbsp (30 mL)lemon juice
½ tsp (2 mL)each salt and pepper
​Toppings:

1 cup (250 mL)garlic hummus
2 cups (500 mL)shredded smoked Cheddar
½ cup (125 mL)sliced Kalamata olives
2 cups (500 mL)halved grape tomatoes

​Reserved beet leaves and stems (*see below)
2 tsp (10 mL)olive oil
1 tsp (5 mL)lemon juice
¼ tsp (1 mL)each salt and pepper

This recipe makes about 8 servings.

You can serve this dish as appetizers and/or snacks.

PER SERVING (1/8 recipe or 1/4 flatbread): 400 calories, 20 g fat, 6 g saturated fat, 70 mg cholesterol, 570 mg sodium, 42 g carbohydrates, 5 g fibre, 4 g sugars, 14 g protein. % RDI: 20% calcium, 25% iron, 20% vitamin A, 25% vitamin C.
