Preparation

Preheat oven to 425 degrees F Combine the peppers, onion, zucchini, tomatoes, beans, garlic, and 1 1/2 teaspoons oil in a large bowl and stir until well coated.

Place in a single layer on a large baking sheet. Bake 14 minutes, stir and bake 6 minutes or until vegetables are browned on edges.

Combine the rice, quinoa, basil, nuts and 1/2 teaspoon of the salt in a large bowl.

Place on serving platter. 

Sprinkle evenly with the feta.

Drizzle the vegetables with the remaining oil and sprinkle with the 1/4 teaspoon salt.

Brown Rice - Quinoa With Roasted Veggies And Feta

1 medium orange bell pepper, seeded and cut into 1-inch pieces
1 medium onion, cut into 8 wedges
1 medium zucchini, halved lengthwise and cut into 1-inch pieces
1 cup grape tomatoes
1/2 of a 16-ounce can no salt added garbanzo beans, rinsed and drained
4 medium whole garlic cloves, peeled only
1 1/2 tablespoons extra virgin olive oil, divided use
3 cups hot cooked brown rice
1 cup hot cooked quinoa
1/4 cup chopped fresh basil
1 ounce pine nuts, toasted
3/4 teaspoon salt, divided use
2 ounces crumbled reduced fat feta
